Ingredients

INGREDIENTS FOR CRUST:

  • 2 cups flour
  • 1 cup brown sugar
  • 1/2 cup soft butter

INGREDIENTS FOR CARAMEL LAYER:

  • 2/3 cup butter
  • 1/2 cup brown sugar
  • 1 cup pecans
  • 1 cup chocolate chips

Instructions

INSTRUCTIONS FOR CRUST:

  • Mix ingredients until well blended and particles are fine. Pat firmly into an ungreased 12x9x2 inch pan.

INSTRUCTIONS FOR CARAMEL LAYER:

  • Combine in one-quart saucepan butter and brown sugar. Heat until surface begins to boil. Remove from heat.
  • Sprinkle one cup of whole pecans evenly over unbaked crust. Pour caramel layer over pecans.
  • Bake in center of 350° F oven for 18 to 22 minutes or until bubbly and crust is golden brown.
  • Immediately sprinkle with one cup chocolate chips to melt slightly.
  • Swirl chips as they melt. Leave some whole for a marbled effect. Do not spread chips.
  • Allow to completely cool before cutting.

Lemon Bars

LEMON BARS

Another longtime favorite, based on a recipe of Grandma Jackie's

Ingredients

INGREDIENTS FOR CRUST:

  • 2 cups sifted flour
  • 1/2 cup powdered sugar
  • 1 cup butter

INGREDIENTS FOR FILLING:

  • 4 beaten eggs
  • 1/3 cup lemon juice fresh is best
  • 1/2 teaspoon baking powder
  • 2 cups sugar
  • 1/4 cup flour

Instructions

INSTRUCTIONS FOR CRUST:

  • Sift together flour and sugar.
  • Cut in butter until mixture is lumpy.
  • Press into 9×13 oblong pan and bake 15-20 minutes (until golden brown).

INSTRUCTIONS FOR FILLING:

  • Beat eggs, sugar and lemon juice together. After sifting flour and baking powder together, stir it into egg mixture.
  • Pour over crust and put back into oven for 25-35 minutes.
  • Sprinkle with powdered sugar (though a sieve or sifter).
  • Cool and cut into bars.

Ingredients

  • 3 1/2 cups semi-­sweet chocolate chips
  • 1 cup butter
  • 1 1/2 tablespoons instant espresso powder
  • 1 tablespoon vanilla
  • 1/2 cup flour plus
  • 1 tablespoon flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped walnuts
  • 3 eggs
  • 1 cup sugar plus
  • 2 tablespoons sugar

Instructions

  • Heat oven to 350°F.
  • Line a 13×9 pan with foil and butter the foil.
  • Place chocolate chips and butter in a saucepan and stir constantly over medium-­low until melted
  • and smooth. Add espresso powder and vanilla and stir. Cool 15 minutes.
  • Whisk flour, baking powder, and salt in a small bowl. Add walnuts and toss to coat.
  • Whisk eggs and sugar in a large bowl just to blend. Add chocolate mixture and stir to blend. Add
  • flour mixture and stir to just blend. Pour into pan.
  • Bake until a tester comes out with moist crumbs, about 35 minutes.
  • Cool completely. Cover and chill for 6 hours. Remove from pan to work surface. Cut into 16 pieces.

Grandma Jackie gave us this recipe. We believe that your Great Uncle Mike Muth dubbed these “gotcha brownies”.

Ingredients

  • 1 cup sifted flour
  • 1 cup granulated sugar
  • 1 teaspoon salt
  • 2/3 cup soft shortening
  • 2 eggs unbeaten
  • 1 teaspoon vanilla extract
  • 2 squares unsweetened chocolate unmelted
  • ½ cup chopped walnuts
  • 24 marshmallows snipped into quarters
  • 1 cup semisweet chocolate pieces

Instructions

  • Heat oven to 350 degrees
  • Grease a 11x7x ½ inch pan
  • Sift flour, sugar, salt
  • Add shortening and eggs
  • Beat until light and fluffy
  • Blend in vanilla and chocolate pieces
  • Stir in walnuts
  • Turn into pan
  • Bake 20 to 25 minutes or until done
  • Immediately cover with marshmallows, spread
  • Cool
  • Cut into squares

Bake Sale Brownies

Bake Sale Brownies

Ingredients

  • 2 ¼ pound sticks butter at room temperature
  • 2 cups granulated sugar
  • 1 cup firmly packed light brown sugar
  • 2/3 cup dark corn syrup
  • 6 large eggs
  • 6 squares 6 ounces unsweetened chocolate
  • 2 cups fork-stirred all-purpose flour
  • 2 cups pecan halves or coarsely broken walnuts

Instructions

  • In a large mixing bowl with a wooden spoon (or in a mix master) stir until the butter, granulated sugar, brown sugar, and syrup are blended. Stir in eggs, one at a time, until blended.
  • In a small saucepan over very low heat (or over hot water), melt the chocolate; stir into the sugar mixture until blended. Add the flour and stir until smooth. Add the pecans; stir until evenly distributed. (If you like, you may reserve ½ cup of pecans and before baking the batter, top it with them.)
  • Turn into prepared pan; with a metal spatula, spread the batter evenly. Bake in preheated 350-degree oven until a cake tester inserted in the center comes out clean – 40 minutes. (See Grandma Jackie’s note at the top.) Place pan on a wire rack to cool. Refrigerate, uncovered, until chilled.
  • Invert on a large board and remove pan; strip off foil. Turn right side up. Cut into bars, making six evenly spaced cuts on the 15-inch side and five on the 10-inch side. Wrap each brownie individually in saran wrap; store in a container in refrigerator.

Notes

Preheat oven to 350 degrees
Line the bottom and sides of a 15-by-10-by-one-inch jellyroll pan with a sheet of foil.

Grandma Jackie makes a note here that cooking these in a 325-degree oven for 50 – 60 minutes is better.
